An elevated banana bread with butter-toasted pecans folded into a moist, tender crumb. The browned butter pecans add an irresistible nutty richness.

  • 2 tablespoons unsalted butter (for pecans)
  • 1 cup pecan halves, chopped
  • 1/4 teaspoon fine sea salt (for pecans)
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1 cup plus 2 tablespoons granulated sugar
  • 2 large eggs, at room temperature
  • 1/2 cup unsalted butter, melted and cooled
  • 1 1/2 cups mashed very ripe bananas (about 3 large)
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract

    Melt 2 tablespoons butter in a small skillet over medium heat. Add chopped pecans and 1/4 teaspoon salt, cooking while stirring until lightly browned, about 5 minutes. Set aside to cool completely.

    Preheat oven to 325°F. Butter a 9-by-5-inch metal loaf pan.

    In a medium bowl, whisk together flour, baking soda, cinnamon, and 1/2 teaspoon salt.

    With an electric mixer, beat sugar and eggs on medium-high speed until light and fluffy, about 5 minutes. Gradually add melted butter on low speed, then mix in mashed bananas, sour cream, and vanilla until just combined.

    Fold in the dry ingredients with a rubber spatula until just incorporated. Fold in the butter-toasted pecans.

    Pour batter into the prepared loaf pan. Bake for approximately 1 hour until a thermometer inserted in the center reads 200 to 205°F and the top is golden brown.
