All the flavor of pecan pie in a portable bar cookie with a buttery shortbread crust. Much easier to make than a whole pie.
Preheat oven to 350°F. Line a 9x13-inch pan with parchment paper, leaving an overhang for easy removal.
Pulse flour, powdered sugar, cold butter, and salt in a food processor until crumbly. Press evenly into the pan.
Bake the crust for 15 minutes until lightly golden.
Meanwhile, whisk eggs, corn syrup, brown sugar, melted butter, and vanilla together.
Sprinkle pecans over the hot crust, then pour the filling over the pecans.
Bake for 25 to 30 more minutes until the filling is set. Cool completely before cutting into bars.
