All the flavor of the beloved Southern pecan pie transformed into sweet, buttery caramel corn studded with crunchy glazed pecan halves. Ridiculously easy to make in the microwave.
Lay out two 3-foot pieces of parchment paper, overlapping, on your work surface. Pop popcorn, remove unpopped kernels, and transfer to a large brown paper grocery bag.
Combine butter, both brown sugars, corn syrup, maple syrup, molasses, and salt in a large microwave-safe bowl. Microwave on high for 2 minutes and stir.
Return to microwave for 1 minute, stir, then microwave another 1 minute. Repeat once more for a total of 3 additional minutes of cooking.
Stir cinnamon, vanilla, and baking soda into the hot caramel mixture. It will foam up.
Pour caramel sauce over popcorn in the paper bag, fold bag closed, and shake vigorously to coat. Add pecan halves and shake again.
Spread the coated popcorn and pecans onto the prepared parchment paper. Sprinkle with sea salt.
Let cool completely before breaking apart. Store in airtight containers.
