A rich, nutty vinaigrette made by blending toasted pecans with apple cider vinegar, shallots, and a touch of maple syrup. Transforms any salad into something special.

  • 1/2 cup pecan halves
  • 1/4 cup apple cider vinegar
  • 1 small shallot, roughly chopped
  • 1 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup extra-virgin olive oil

    Toast the pecans in a dry skillet over medium heat, stirring frequently, for 4 to 5 minutes until fragrant and lightly browned. Transfer to a plate and let cool completely.

    Add the cooled toasted pecans, apple cider vinegar, chopped shallot, maple syrup, Dijon mustard, salt, and pepper to a high-powered blender or food processor.

    Blend on high speed while slowly drizzling in the olive oil through the feed tube. Continue blending until the dressing is completely smooth and emulsified, about 60 seconds.

    Taste and adjust seasoning, adding more salt, pepper, or maple syrup as desired. If the vinaigrette is too thick, thin it with a tablespoon of water at a time until the desired consistency is reached.

    Transfer to a jar or bottle and refrigerate. The vinaigrette will keep in the refrigerator for up to one week. Shake well before each use, as it may thicken when chilled.
