Crisp apple slices, crunchy pecans, and blue cheese over a bed of fresh spinach with a maple Dijon dressing.

  • 6 cups fresh baby spinach
  • 1 large Honeycrisp apple, thinly sliced
  • 3/4 cup candied or toasted pecans
  • 1/3 cup crumbled blue cheese
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil
  • Salt and pepper to taste
