Moist, tender banana bread studded with crunchy toasted pecans. A comforting classic perfect for breakfast or afternoon snacking.
Preheat oven to 350°F. Grease a 9x5-inch loaf pan.
In a large bowl, mash bananas and stir in melted butter. Mix in sugar, egg, and vanilla.
Whisk flour, baking soda, and salt together, then fold into the banana mixture until just combined.
Fold in chopped pecans. Pour batter into prepared pan.
Bake for 55 to 60 minutes, until a toothpick inserted in the center comes out clean.
Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
