Crispy, cluster-filled homemade granola with maple syrup and toasted pecans. Perfect over yogurt or with milk.
Preheat oven to 325°F. Line a large baking sheet with parchment paper.
Toss oats and pecans together in a large bowl.
Whisk maple syrup, melted coconut oil, brown sugar, vanilla, cinnamon, and salt. Pour over the oat mixture and stir until everything is well coated.
Spread in an even layer on the baking sheet. Press down firmly with a spatula for better clusters.
Bake for 25 to 30 minutes, stirring once halfway through, until golden and fragrant.
Let cool completely on the pan without stirring — this is how you get big clusters. Break apart and store in an airtight container.
