Thick-cut pork chops stuffed with a savory mixture of pecans, herbs, and breadcrumbs, then pan-seared and oven-finished.
Preheat oven to 375°F. Cut a deep horizontal pocket in each pork chop.
Melt 1 tablespoon butter in a skillet. Sauté garlic for 30 seconds, then stir in pecans, breadcrumbs, sage, and thyme. Cook 2 minutes until fragrant.
Season pork chops with salt and pepper. Stuff each pocket with the pecan mixture and secure with toothpicks.
Heat olive oil and remaining butter in an oven-safe skillet over medium-high heat. Sear chops for 3 minutes per side.
Transfer the skillet to the oven and bake for 20 to 25 minutes until the internal temperature reaches 145°F.
Rest for 5 minutes before serving. Remove toothpicks.
