Creamy, melt-in-your-mouth New Orleans-style pralines loaded with toasted pecans. A beloved Southern confection.
Line baking sheets with parchment paper or wax paper.
Combine granulated sugar, brown sugar, and milk in a heavy saucepan. Cook over medium heat, stirring constantly, until sugars dissolve.
Stir in butter and pecans. Continue cooking, stirring frequently, until mixture reaches soft ball stage (235°F on a candy thermometer).
Remove from heat and stir in vanilla. Beat with a wooden spoon until mixture thickens and becomes creamy, about 2 minutes.
Quickly drop by spoonfuls onto the prepared baking sheets. Work fast as the mixture sets up quickly.
Let cool completely until firm, about 20 minutes.
