Nutty wild rice studded with toasted pecans, dried cherries, and fresh herbs. An elegant side dish for any occasion.

  • 1 cup wild rice blend
  • 2 1/2 cups chicken or vegetable broth
  • 1 tablespoon butter
  • 1 cup toasted pecan halves
  • 1/2 cup dried cherries or cranberries
  • 3 green onions, sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

    Bring broth and butter to a boil in a saucepan. Add rice, reduce heat, cover, and simmer for 40 to 45 minutes until tender.

    Fluff rice with a fork and let steam for 5 minutes uncovered.
